Master Chocolatier and Owner of Chocolate Springs
In 2003 Joshua Needleman opened his life-long dream of Chocolate Springs Café in Lenox Massachusetts, where he displays his fusion of Asian aesthetics with traditional European techniques. After graduating from the Culinary Institute of America in 1994, Needleman worked at Wheatleigh, Cranwell, and Canyon Ranch before heading to La Maison du Chocolat in Manhattan and Paris, where he further developed his passion for working with chocolate. Joshua believes in balancing the natural beauty of chocolate with exciting flavor infusions such as Jasmine Tea, Lavender Honey, CHAI, and Tangerine Ginger Tea, to name a few. Chocolate Springs was cited as among the country's Top Ten Artisanal Chocolatiers by SAVEUR magazine. The café has also been recognized by TIME Magazine, Travel and Leisure, and Elle Décor Magazine.
